Is there any snack more delicious or convenient than nachos with your choice of dip?  You might prefer a traditional salsa or a spicy jalapeno nacho cheese sauce, but fruit salsa is a significantly healthier alternative.  The thought of a “healthy alternative” to salsa and cheese sauce surely strikes fear into the hearts of nacho lovers the world over, but rest assured that this fruit salsa is an equally tasty substitute!

The salsa combines the tangy zest of fresh garden strawberries with the mild sweetness of gala apples and other fruits to deliver a rich flavor profile that you won’t soon forget, while crisp cinnamon tortillas serve as a perfect accompaniment.  This recipe is quick, simple, and requires minimal preparation tools.

Fruit Salsa Ingredients

  • 1 pkg. strawberries
  • 1 pkg. raspberries
  • 2 kiwis
  • 2 gala apples
  • 3 tsp. strawberry jelly
  • 1 tsp. sugar
  • 1 tsp. brown sugar

Cinnamon Tortilla Ingredients

  • 1 pkg. flour tortillas
  • 1 c. sugar
  • 2 tsp. cinnamon

Directions

  1. Finely dice strawberries, raspberries, kiwis, and apples, and mix them together.
  2. In a separate bowl, mix strawberry jelly, sugar, and brown sugar.  Stir jelly mixture and fruit together, then chill.
  3. Heat oven to 350 degrees Fahrenheit.
  4. Mix sugar and cinnamon and pour into a 1 gallon zip lock bag.
  5. Spray both sides of flour tortilla with butter-flavored cooking spray.
  6. Use a pizza cutter to cut the tortillas and place them in the bag.  Shake it around so each slice of the tortilla is covered in the cinnamon / sugar mix.
  7. Place the tortilla strips on a cookie sheet.  Bake for 5 minutes on one side, flip them, and bake the other side for 5 minutes.

Enjoy!
